Tasting Notes – 2010
During processing, Corey decided to ferment this Grenache with partial whole clusters intact. Much to others detriment, he bucketed and weighed out 270 lbs out of 1000. We are happey he did this. The stems utilized helped soften the acidity on the palate and added an extra bit of complexity. This wine has classic aromatics of ripe black rasberry, strawberry, & black tea. The palate is full bodied and rich, echoing the fruit and tea aromatics with a long soft finish. If warranted, we will be using whole clusters in our red fermentations from now on. Due to limited supply, this wine will be available exclusivley to our mailing list.

Fermentation: Open top fermenters; cap punched 3 times daily; 27% Whole Cluster
Oak Aging: 11 Months (4 months 1 year old Francois Freres Allier; 7 months nuetral)
Total Alcohol: 15.1%
